Vegan recipe for seitan strip fajitas! Serve with taco sauce, Tofutti Better Than Sour Cream, and guacamole.

Ingredients

  • olive oil: 3 Tbsp
  • red bell pepper: 1 piece (cut into strips)
  • green bell pepper: 1 piece (cut into strips)
  • yellow bell pepper: 1 piece (cut into strips)
  • red onion: 0.5 piece (chopped)
  • seitan: 1 pound (cut into strips)
  • reduced-sodium soy sauce: 2 Tbsp
  • garlic: 3 clove (minced)
  • chili powder: 1 tsp
  • paprika: 1 tsp
  • ground cumin: 1 tsp
  • whole grain tortillas: 10 piece

  1. Heat olive oil in a large skillet over medium heat; cook and stir bell peppers and onion in hot oil until tender, 3 to 5 minutes. Add seitan, soy sauce, garlic, chili powder, paprika, and cumin; cook and stir until seitan is heated through, 7 to 10 minutes.
