This Sloppy Joe casserole is a great comfort food recipe that I love to make on a cold winter day. It's always a hit at potluck dinners.

Ingredients

  • penne pasta: 1 pack (16 ounce pack)
  • olive oil: 1 Tbsp
  • ground beef: 1 pound
  • medium yellow onion: 1 piece (chopped)
  • red bell pepper: 1 piece (chopped)
  • green bell pepper: 1 piece (chopped)
  • paprika: 1 Tbsp
  • garlic powder: 2 tsp
  • kosher salt: 2 tsp
  • (15-ounce) cans tomato sauce: 2 piece
  • ketchup: 0.5 cup
  • yellow mustard: 2 Tbsp
  • Worcestershire sauce: 2 Tbsp
  • light brown sugar: 2 Tbsp
  • frozen yellow corn kernels: 2 cups
  • ½ cups shredded Colby-Jack cheese: 1 piece (divided)
