Ingredients

  • frozen chopped spinach, thawed and squeezed thoroughly to remove liquid: 1 pack (10 ounce pack)
  • eggs or equivalent egg substitute: 4 piece
  • part-skim ricotta cheese: 1 cup
  • freshly grated Parmesan cheese: 0.75 cup
  • portobello mushrooms: 0.75 cup (chopped)
  • scallions with some green tops: 0.5 cup (finely chopped)
  • Italian seasonings: 0.25 tsp (dried)
  • pinch salt and pepper: 1 piece (to taste)

  1. Preheat the oven to 375 degrees F (190 degrees C).
