A breakfast quesadilla recipe that's cheap, quick, and easy to make and everyone is sure to love. It's great to stay at home and eat with your family or to take on the go. This one is sure to be a hit!

Ingredients

  • bulk pork breakfast sausage (such as Jimmy Dean®): 1 pound
  • cooking spray:
  • eggs: 6 piece
  • milk: 0.25 cup
  • Cheddar cheese (such as Kraft®): 0.5 pound (shredded)
  • butter: 0.25 cup
  • flour tortillas, at room temperature: 24 piece

  1. Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Let sausage cool.

  2. Spray a large skillet with cooking spray; warm over medium-high heat. Beat eggs with milk in a bowl. Pour into the skillet; cook and stir until eggs are set, about 5 minutes. Set aside to cool.

  3. Spread butter over 1 side of each tortilla. Heat a skillet over medium heat. Place a tortilla, buttered-side down, in the skillet. Top with a layer each of the sausage, eggs, then cheese. Top with another tortilla, buttered-side up. Cook until golden brown on both sides, 2 to 3 minutes per side. Transfer to a plate. Repeat with remaining tortillas and filling.

  4. Slice quesadillas into quarters. Serve.
