A basic and simple recipe for carrot salad. The pineapple is optional. It tastes great as is but you can always add shredded coconut as well.

Ingredients

  • ½ cups shredded carrots: 4 piece
  • pineapple, undrained: 1 can (8 ounce can, crushed, optional)
  • raisins: 0.75 cup
  • sugar: 0.5 cup
  • sugar: 2 Tbsp
  • mayonnaise: 0.5 cup
  • ½ tablespoons freshly squeezed lemon juice: 1 piece
