A delicious pepper steak recipe served with boiled white rice — easy and made from items I've already got in my cupboards. My mother clipped this recipe from somewhere and it became a specialty of mine; however, I've been unable to find the original source.

Ingredients

  • beef top sirloin steak: 1 pound
  • soy sauce: 0.25 cup
  • white sugar: 2 Tbsp
  • cornstarch: 2 Tbsp
  • ground ginger: 0.5 tsp
  • vegetable oil, divided: 3 Tbsp
  • red onion, cut into 1-inch squares: 1 piece
  • green bell pepper, cut into 1-inch squares: 1 piece
  • tomatoes, cut into wedges: 2 piece

Stages of cooking

  1. Slice steak into 1/2-inch thick slices across the grain.

  2. Whisk together soy sauce, sugar, cornstarch, and ginger in a bowl until the sugar has dissolved and the mixture is smooth. Place steak slices into the marinade, and stir until well-coated.

  3. Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat, and cook steak strips in batches in hot oil so as not to crowd the pan. Cook and stir until well-browned, about 3 minutes, and remove steak from the wok to a bowl. Repeat with remaining steak, adding more oil as needed, and set the cooked meat aside.

  4. Return cooked steak strips to the hot wok, and stir in onion. Toss steak and onion together until onion begins to soften, about 2 minutes, then stir in green pepper. Cook and stir the mixture until peppers have turned bright green and started to become tender, about 2 minutes more, then add tomatoes. Stir everything together to mix and blend flavors, and serve.

History of the Chinese Pepper Steak:

Chinese Pepper Steak is a beloved dish that has become popular all around the world. The recipe, as its name suggests, originated in China and is a stir fry featuring beef, vegetables, and a delicious sauce. The dish was likely created as a way of making tough cuts of beef more tender and flavorful by marinating them in a sauce before cooking. The combination of the juicy beef with the crispy vegetables and savory sauce has made it a favorite dish of many Chinese food lovers.

Tips and Tricks for Chinese Pepper Steak Recipe:

To make this recipe perfect, here are some tips and tricks you can follow:

  • Choose the right cut of meat: For best results, use a quality cut of beef like top sirloin, flank steak or skirt steak.
  • Cut the meat against the grain: Slicing the meat across the grain helps to reduce toughness and make it more tender.
  • Marinate the meat well: Letting the steak sit in the marinade for at least 30 minutes helps to infuse it with flavor and make it extra juicy.
  • Don't overcrowd the pan: Overcrowding the pan can cause the meat to steam instead of sear, so be sure to cook it in batches.
  • Add vegetables in stages: Cook the onions first until softened, then add the green pepper right after. Finally, add the tomatoes and cook it until all the vegetables are tender but still crispy.

Tips for presenting the dish:

Chinese Pepper Steak is a visually appealing dish that features a colorful array of veggies and tender beef. Here are some tips for presenting it well:

  • Serve it over rice: This dish goes perfectly with white rice, which will absorb the flavorful sauce and add some great texture.
  • Garnish with cilantro: Sprinkle some fresh cilantro on top before serving for a pop of color and flavor.
  • Use a wok or large skillet: This dish is typically cooked in a wok or large skillet, so presenting it in the same pan it was cooked in can add some great authenticity to the dish. It also makes for a beautiful presentation!
