This Mad Hatter Salad recipe is a mixture of coleslaw, green onions, and broccoli combined with a dry mixture and a delicious dressing. It creates a wonderful salad that everyone will want more of. Great for family, church, or barbecue gatherings!

  • coleslaw mix: 1 pack (16 ounce pack)
  • head fresh broccoli: 1 piece (cut into florets)
  • green onions: 8 piece (chopped)
  • butter or margarine: 0.5 cup
  • chicken flavored ramen noodles: 2 packages (3 ounce packages)
  • slivered almonds: 1 cup
  • unsalted sunflower seeds: 1 cup
  • white sugar: 0.5 cup
  • vegetable oil: 0.5 cup
  • apple cider vinegar: 0.25 cup
  • soy sauce: 1 tsp

  1. Toss together coleslaw mix, broccoli, and green onions in a large bowl. Set aside.

  2. Melt butter in a large skillet over medium heat. Crumble ramen noodles into a bowl, and mix with almonds and sunflower seeds. Sprinkle ramen seasoning packets over top. Add to the skillet; cook and stir until noodles and nuts are toasted, about 8 minutes.

  3. Combine sugar, oil, vinegar, and soy sauce in a jar with a tight-fitting lid. Seal, and shake vigorously to blend.
