A mild, nutty-tasting (though nut-free) vegan pesto made with pepitas, parsley, and basil. Tastes great on pasta or bread.

Ingredients

  • parsley: 0.5 cup (fresh)
  • pepitas: 0.33333 cup
  • basil: 1 pack (2/3 ounce pack, fresh)
  • lemon juice: 1 Tbsp
  • water: 1 Tbsp
  • garlic salt: 0.25 tsp
  • extra-virgin olive oil: 0.25 cup

  1. Combine parsley, pepitas, basil, lemon juice, water, and garlic salt in the bowl of a food processor; pulse until blended into a coarse meal. Pour olive oil in slowly and pulse a few times until pesto has come together.
