This chicken and quinoa recipe is incredibly easy, delicious, and spicy! Taste-test approved by a very picky 3-year-old.

Ingredients

  • chicken broth: 2 cups
  • quinoa: 1 cup
  • vegetable oil: 2 tsp (or as needed)
  • onion: 0.5 piece (chopped)
  • garlic: 2 clove (to taste, minced)
  • ½ pounds ground chicken: 1 piece
  • ½ (10 ounce) cans diced tomatoes with green Chili peppers (such as RO*TEL®): 1 piece
