Healthy fat and healthy grain waffle. Freeze well for quick toaster breakfast! Recipe yield is for thin waffles; I'd guess at least half that for Belgian waffles. I like to top with sliced banana.

Ingredients

  • ½ cups whole wheat pastry flour: 1 piece
  • white sugar: 2 Tbsp
  • baking powder: 2 tsp
  • salt: 0.5 tsp
  • ½ cups milk, room temperature: 1 piece
  • virgin coconut oil: 0.33333 cup (melted)
  • egg: 1 piece (beaten)
  • vanilla extract: 0.5 tsp

  1. Preheat a waffle iron according to the manufacturer's instructions.
