These frittata muffins are an easy way to make eggs for a group.

Ingredients

  • cooking spray:
  • olive oil: 1 Tbsp
  • fresh asparagus: 1 cup (chopped)
  • green bell pepper: 0.25 cup (chopped)
  • red onion: 2 Tbsp (chopped)
  • eggs: 6 piece
  • milk: 0.5 cup
  • salt: 0.25 tsp
  • ground black pepper: 0.125 tsp
  • cheddar cheese: 1 cup (shredded)
