A quick and simple strawberry pie filling recipe to turn freshly picked strawberries into a decadent filling. Use to make pies, top cheesecakes, or just simply serve over ice cream.

Ingredients

  • strawberries: 1 cup (mashed)
  • water: 0.75 cup (if needed)
  • white sugar: 0.75 cup
  • cornstarch: 3 Tbsp
  • lemon juice: 1 Tbsp
  • salt: 0.25 tsp
  • strawberries: 4 cups (sliced)

  1. Combine mashed strawberries and water in a saucepan; bring to a boil and simmer for about 3 minutes.
